I was in London on Wednesday and found an amazing clean eating cafe in South Kensington called <a href="http://www.rootsandbulbs.com/" target="_blank"><b>Roots and Bulbs</b></a>; they sell amazing vegan cakes and brownies, pressed juices and incredible smoothies. ('<i>The bee</i>' smoothie is heavenly and the banana bread is the best thing I've tasted since becoming vegan). I was then inspired by their <i>'Smart Smoothie'</i> to concoct this healthy cold latte/mocha, which, to my surprise (because it's usually a 50/50 chance whether my smoothies will taste good or not!), tasted as amazing as something I would expect from a professional coffee shop!<br />
I think even non-coffee lovers would adore this, the sweetness makes it compare to coffee cake, which I adored even before I liked coffee.<br />

Just blend all the ingredients together (I use the nutribullet) and chill in the fridge before drinking, or heat in a pan if you fancy it warm.<br />

This was a new invention of mine the other day, when I really wanted something simple, warm and homely. This is now something I will definitely have again when I'm feeling low and need something wholesome, particularly in the winter.</div>

<i>1 Sweet Potato</i></div>

<i>1 1/2 Medium Potatoes</i></div>

<i>1 Carrot</i></div>

<i>1/2 Courgette</i></div>

<i>1/2 Aubergine</i></div>

<i>Sweetcorn cut from half a cob</i></div>

Cut the sweet potato into small chunks (about 2cm cubes) and cook in the oven on 180°c for 40mins until soft. I cooked mine with a little drizzle of rapeseed oil and a sprinkle of thyme to enhance the flavour. When the sweet potato has been in the oven for 10 minutes (30 minutes left), put the other potatoes onto boil for 30 minutes. They need chopping to a similar size as the sweet potato, then once they have been brought to the boil, let them simmer until soft. I timed both the potatoes perfectly so that they finish cooking at the same time.</div>

While you're waiting for the potatoes to cook, prepare your vegetables (They won't need cooking as they will cook in the oven). Cut the carrot and courgette into 1cm thick rounds, slice the aubergine to a similar thickness, and cut the sweetcorn off the cob (or you can use ready prepared sweetcorn).</div>

Start layering the vegetables, carrots at the bottom, then the courgette slices, aubergine, sweetcorn, and topped with kale. Pour over the tin of tomatoes and the wine and shake the dish slightly so it settles into all the gaps. Layer the sausages on top of the vegetables if you're having sausages.</div>

Mash the potatoes separately, layering the sweet potato mash first, then topped with the normal potatoes. </div>

Put the hotpot into a pre-heated oven at 210°c for 1 1/4 hours, removing it's lid halfway through to crisp the potatoes.</div>

Now that the weather is getting hot, I really fancied something 'meaty', with a BBQ taste without the hassle of starting up the BBQ. I have to admit this is the most delicious hot sandwich I've ever tasted and it was so quick! I enjoyed it with a carrot and ginger juice for a fiery refresher in the heat. It's also great because you can alternate the vegetables to whatever you fancy, or to match what you've currently got in the fridge. Other great veggies for this sandwich include squash, aubergine, beef tomatoes, maybe peppers (but I don't like them so I wouldn't know) and steamed kale.<br />

Place the mushroom in the pan and press down with a spatula. Leave for 1 minute, then turn over and add the courgette slices and whole tomatoes to the pan. Once the courgettes start to brown and become slightly translucent, slice the bagel in half and place in the grill pan. Flip the mushroom over, then spoon the tahini on to the mushroom to melt into it, and don't flip it again. Once the bagel has toasted, assemble your burger, and top up with a handful of salad (I used rocket).<br />

Place all of the ingredients (excluding the ones for serving) in an ovenproof bowl, make sure the oats are just covered with milk, then wrap in cling film and leave in the fridge to soak overnight.<br />
In the morning, pre-heat your oven to 180°c. Get your oats out of the fridge, top up with a bit more milk and stir if it looks dry. Add the pear and honey to the top and place in the oven for about 10 minutes, until the pear begins to brown slightly. Top off with almond butter and granola, maybe yogurt if you like yogurt on porridge, and enjoy with a nice green smoothie!<br />

My brown pasta took 11 minutes to cook, but check the back of the packet of yours. Add it to water and boil. Once boiled turn down to a simmer. When the pasta has 10 minutes left, put the broccoli and kale in a steamer above the pasta and put the lid on. In a separate pan, add the white wine and bring to a boil. Turn down to a light simmer and add the tomatoes to the wine, as well as the herbs and seasoning. Once bubbling slowly, add the cream and peas and leave to simmer slowly until the pasta is cooked. Drain the pasta and then add to the cream sauce, and mix in the other vegetables. C'est Fini!</div>

Since reading about the many mind-blowing studies explained in The China Study, I don't think I will ever look at food in the same way ever again. Nor will I look upon cancer as an inevitable part of human existence. But what shocked me is that it's not just <a href="http://www.amazon.co.uk/China-Study-Comprehensive-Nutrition-Implications-ebook/dp/B0041D843M/ref=sr_1_2?ie=UTF8&qid=1435260742&sr=8-2&keywords=the+china+study" target="_blank">The China Study</a> that proves a plant-based diet is the way to optimal health, it's many other things. Incurably ill <a href="http://deliciouslyella.com/philosophy/about/" target="_blank">Ella Woodward</a> was cured by a plant-based diet, the nutribullet emphasises the nutritional benefits of a plant-based diet, and countless newby vegans out there say how much better they feel for changing their diet! Which leads me to believe that this really IS how we are supposed to eat, not a highly processed, animal-based diet. Everything seems to suggest that we humans have evolved as herbivores, not carnivores. And that our bodies can't cope with the consumption of meat and dairy, which leads to our highly 'normal' western diseases (read the China Study for the proof).<br />
So bit by bit I've been changing my diet to a natural, whole-food, plant based diet. By this I mean eating foods that have had minimal processing and are very close to their natural state. This means no refined sugar (for example white caster sugar) and instead eating natural sugars such as maple syrup, honey, and fruit; no refined flours or rice, so I've started swapping white flour and white rice for brown, which has not been processed as much so contains more goodness; and now I virtually eat no dairy and I've almost cut out meat and fish (Although I choose to eat fish more often than meat as this isn't quite as bad). I'm trying to only have meat in 1-2 meals a week, and fish maybe 2, avoiding milk products completely and only consuming the small amount of egg found in baked things. It's been hard and I have to say it's been draining, cooking constantly, but it's also very exciting trying loads of new things that as a meat-eater I never thought to try, such as chia seeds and almond butter. When you cut out such large staples in your diet like meat it's important not to become nutrient deficient in vitamins that it's abundant in. I spent a lot of time researching all the important vitamins and minerals we get from eating meat and dairy, and researched plant sources of these things. Spinach, chia and hemp seem to be powerhouses when it comes to providing us with essential nutrients, high fibre and protein. Almonds have also been a big go-to energy snack.<br />

But it's not just eating well that's key to optimal health. It's living well. That means exercising. And I have to say, out of everything I've changed, that's made the biggest impact. It's amazing how 15 minutes of yoga on a bloated stomach makes it completely go away, and a 3 minute sprint actually wakes me up and makes me feel motivated again! I tried pilates too, and the day-after ache is SO satisfying. I now find when I sit around too long I crave a yoga session to stretch me out and ease the cramps from sitting too long, and it really does help!<br />
So now my blog is my way of documenting my journey to optimal health, and sharing my foodie experiments that contain nothing bad at all (so totally guilt-free) and are packed with goodness! It's going to be tough finding alternatives for things I love, making them delicious and healthy at the same time (I'd love a recipe for healthy vegan croissants!) and I know it's not always going to turn out well, like my blueberry 'crater' muffins that were solid, raw and rock-like.. but my aim is to share the things that work amazingly!<br />

I love baked beans, but I've recently been put off by the sugar content. With nearly 10g of sugar in just half a tin, that's almost half my RDA, and I've also been trying to eat only natural sugars. I also love a large variety of beans so I get nutrients from all kinds of beans and pulses as well as a rainbow of colours and textures. So I created these healthy 10-bean baked beans, with only natural sugars but double the flavour! I enjoyed them with baked sweet potato and kale, (also vegan cashew cheese, but this experiment didn't taste as good as I hoped so I scraped it off!). It took quite a while to make them, but next time I will make a large batch, to store some in the freezer for a quick go-to snack.<br />

The dried beans need soaking overnight, so put the beans in a bowl and cover with plenty of cold water, and leave in the fridge to soak. If you don't want to wait, buy a tin of beans already in water and skip this step.<br />

After soaking, rinse with cold water and top up with fresh water in a pan and put on to boil, once boiled allow it to simmer for 1 hour. Pour away the water and rinse the beans with freshly boiled water, then add all the ingredients to a pan and heat until it boils (keep the garlic as a whole crushed clove, and pick it out before you serve). Leave to simmer for 30 minutes to let the beans soak up the sauce. Keep in the fridge and heat up in a pan for a few minutes when you're ready to eat it. It will keep in the fridge for about a week, or keep in the freezer.<br />

Porridge is one of my new favourite things, there's so much opportunity for experimentation! I used to think porridge was bland and I could never finish a bowlful, but that's because I didn't know what to do with it. Here's a recipe for my newest porridge combination, it's absolutely divine! Think lemon curd flapjack but totally healthy!<br />

<b>Ingredients</b><br />
30g porridge oats<br />
15g chia seeds<br />
Juice of half a lemon<br />
Grated zest of half the lemon<br />
A handful of mixed raisins and sultanas<br />
Enough coconut milk to cover the oats in your bowl (use any nut milk)<br />
A drizzle of local honey<br />
1 tbsp of almond butter<br />

Choose an oven proof bowl and add in the oats, chia seeds, and raisins. Pour over coconut milk until it just covers all the ingredients. Now add the lemon juice and zest, honey and almond butter and stir through. Leave to soak for at least 10 minutes (or prepare the night before for a quick breakfast), and add more milk when the levels go down.<br />
Preheat the oven to 180c and oven bake the porridge for 10 minutes.<br />

On my path to changing to a whole-food vegan diet, I'm discovering new ingredients that I've never heard of or used before. Taking meat and dairy out of my diet is hard, but with the excitement of trying new ingredients and recipes, I don't feel at all deprived, but incredibly excited for every meal.<br />

Why did I decide to change my diet, you might ask? I'm currently reading a rather gripping scientific book called 'The China Study' which explains the vast amount of research and strikingly solid evidence linking diet to health. In virtually all studies, animal protein (meat, fish, eggs and dairy) has been found to promote the occurrence of cancers, heart disease, obesity, diabetes and many more Western diseases. You really should read it, it's incredibly interesting and the evidence provided is actually quite scary! (<a href="http://www.amazon.co.uk/China-Study-Comprehensive-Nutrition-Implications/dp/1932100660/ref=sr_1_1?ie=UTF8&qid=1433933411&sr=8-1&keywords=the+china+study" target="_blank">Buy the book here</a>)<br />

I also discovered the food blogger <a href="http://deliciouslyella.com/" target="_blank">'Deliciously Ella'</a>, I bought her recipe book and I'm now absolutely obsessed! It's thanks to her that I'm discovering so many tasty recipes and vegan ingredients which are, as of buying her cookbook, a daily staple in my diet. Her vegan, gluten-free, whole-food and refined-sugar free diet is inspiring and SO delicious!<br />

<b>Chia seeds </b>- You may have heard of these before, and let me tell you, it's for good reason! When they soak in nut milk they swell up to create a really unusual but amazing jelly-like seed. They're super seeds when it comes to their magnesium content (83% of your RDA per 100g!) which is essential for many biochemical reactions in the body, and can help relieve symptoms of PMS. They're also high in calcium and protein.<br />
<i><b>How I ate it: </b>I made my porridge with chia seeds mixed in. As they need soaking overnight, I mixed 20g of oats with 20g seeds and covered with plenty of almond milk the night before, then I just needed to pop it in the oven (180c) in the morning for 10 minutes and it was all ready to eat! It was a nice alternative to my regular porridge. I also stirred in home-made vegan nutella, ground ginger and orange zest. </i><br />

<b>Top tip: </b>Using frozen ingredients means the smoothie is extra cold and refreshing. I like to freeze sliced banana when it's just ripe then it stays perfect for as long as I want it and it won't go off, and it also means I can use just as much as I want without wasting any. Although it defrosts a bit mushy so it's best for things like smoothies or ingredients in baking, rather than to eat alone.<br />

Using a blender or electric whisk combine the flour, egg and milk until smooth and lump free, then blend in banana.</div>

Heat a small frying pan with a little sunflower oil, then pour in 1/3 of the mixture, tilting the pan to make the mixture spread into a circle, it should be about 1/2cm thick. Scatter some flaked almonds over the pancake to allow them to sink into the mixture. When the top side starts to look set, ease a spatula under the pancake, and if it seems like it will hold, gently flip it over. Sprinkle some more flaked almonds onto this side, and leave to cook for another 1-2 minutes. Continue to flip every 30 seconds-1 minute until both sides look slightly browned, then serve.</div>

I like to serve my pancakes with yogurt and fruit, my favourite combination being greek yogurt and passionfruit but in this recipe I used blackberry soya yogurt and blueberries. If you have hay fever, try adding a drizzle of local honey on your pancake or yogurt, as the pollen in the honey will help immunise you to the local flowers.</div>

I have to say, when I read about it's hydrating formula I was VERY excited to try it out. When I finally managed to get my hands on one in store, early April, I was spoilt for choice from their wide range of colours, and I loved the feel of it when the assistant tried it on me. But upon wearing it after purchasing, I found it came off pretty easily. Something I find important in lipsticks is staying power, and this is something this lipstick lacks. It feels nice on initially, but the hydrating properties fade fast, along with the colour. It's very high maintenance, even when applied properly with the Chanel lipliner, and I find I have to touch it up constantly to avoid the embarrassment of having a patchy colour. I admit though I do adore the colour, in the shade 'coco' it is a sheer cool orange-red, a very on-trend colour, and it's sheerness making it easier to apply such a bright colour. But for a hefty £26 along with £17.50 for the liner (which makes it easier to apply the colour but certainly doesn't improve it's wear) I will not be buying this lipstick again. I'm afraid to say, unlike face of Rouge coco Keira Knightley, I do NOT love coco. I still haven't found another lipstick as good as Dior Rouge, <a href="http://thisislaurentheblog.blogspot.co.uk/2015/03/product-review-rouge-dior.html" target="_blank">see my review here</a></div>

This all-in-one lipliner is perfect for on-the-go lips, with a soft, hydrating and sheer colour when applied all over, and a nifty brush on the other end to apply lipstick and blend, it makes lipstick application super easy. It also comes with a nice little pencil sharpener to keep the pencil perfectly defined. But the downside to this handy but expensive (£17.50) liner is that it doesn't make lipstick last any longer. I judge staying power by how much I can eat or drink before it budges, good being a whole meal and bad being half a drink. Let's just say this is on the bad end of the scale, and I feel inclined to avoid drinking as much.</div>

When I first applied this my reaction was 'oh no what have I done', I didn't quite expect it to completely rub my foundation off. After a few practice attempts (this was my first highlighter), I discovered that dabbing the stick on my face rather than dragging it was the best approach. When carefully dabbed on over foundation, it gives a natural dewy but matte glow (if that's possible). I love this on my cheekbones, above my lip, and in the corner of my eyes. It is the same colour and application as the well advertised £19 Clinique chubby stick highlighter, but for £9.95! This is definitely money well spent.</div>

I was quiet shocked when I first discovered this as a sample in a magazine; despite it's heavy, sensual, night-time wear appearance, this perfume is very light with a soft feminine floral smell that's perfect for everyday wear. I love it. This is definitely an example of 'don't judge a perfume by it's bottle' or in this case it's editorial advertisement as well. Bad branding here YSL, this is not a heavy, strong and bitter, occasion-wear perfume, but a light, floral, almost vanilla scent. Have a smell next time you see it in store, it's lovely.</div>

I don't normally wear black, I prefer the natural look of brown, but with this I feel I can wear it and still feel like I have naturally long looking lashes. For a while now I have been recognised for my healthy eating habits. A year ago I was eating fried food, piles of cheese and sugary drinks without a care in a world, but I had dull, acne prone skin and a lack of energy to show for it. I thought that's just what everyone looked and felt like, I thought I felt good. But when countless skincare products and vitamin supplements failed to make a difference to my skin and my energy levels, I knew something had to change.</div>

Since then I've packed my diet with as many nutrients I can, started drinking 2-3 litres of water a day, I eat more than 5-a-day and avoid too much meat, and greasy, fatty foods or overloading myself with cheese, milk or sugary snacks. I've become a keen reader of Women's Health magazine, a fitness enthusiast (who would have guessed the P.E. skiver would turn into a fitness lover??) and a lover of all things deliciously healthy (healthy food really does have much more taste and all-round yumminess than junk foods like burgers!)</div>
<div style="text-align: justify;">
And that change is the best decision I've ever made. You really don't know what <i>good</i> feels like until you've <i>actually</i> felt <i>good. </i>My acne prone skin, lack of energy and low moods were my body's way of crying out to be nourished. Now I wake up ready with energy to face the world (well, most of the time), my skin is nearly spotless and is glowing and smooth, and I generally feel happy all the time. Trust me, changing your diet really <i>will</i> make a HUGE difference!</div>

So there you go! Think what you like of it, but this is what I eat to stay both satisfied with what I'm eating as well as happy and healthy. You may have noticed some things that pop up a lot, like avocados, nut milks ect. I'm going to briefly list these things that I eat very regularly below along with their health benefits, so you can see how eating these a lot can benefit you, like they do for me.</div>

<u>Avocado</u> - packed with healthy fats to help with heart and brain function, fight against cancer, have anti-inflammatory compounds and make you feel fuller for longer.</div>

<u>Nut milks</u> - nut milks include the now readily available almond, hazelnut, and coconut. I'm also classing my soya products in this category. These are all far lower calorie than cows milk but when incorporated into things like smoothies and porridge like I do you can't tell the difference. Almonds keep your energy levels up and reduce the risk of heart disease. Coconut milk can help protect the body from infections and viruses.</div>

<u>Matcha Powder</u> - Matcha is a form of concentrated green tea, powdered. Because you drink all of the leaf, rather than tiny bits that seep through a tea bag, you ingest all of the anti-oxidising nutrients (Up to 15x more than a regular cup of green tea). It also provides the body with energy for up to 6 hours, which keeps you alert and focused, and boosts the metabolism (giving weight loss benefits).</div>

<u>Sweet potato</u> - One of the best forms of beta-carotene, an important antioxidant for eye and digestive health. Contrary to belief, it takes no professional Barista at your favourite coffee shop to make a delicious drink. And a milky coffee need not be a high calorie treat, with nut milks (almond, hazelnut or coconut) it cuts the calories by at least half, but keeping all the flavour. The only issue here is the amount of sugar in the syrup, so if you wish to be really healthy, just have a normal latte - use the same recipe but without the syrup. I've perfected this latte recipe to my own taste, so feel free to tweak the amounts to how you like it, adding more or less coffee depending on how strong you like it (my latte is around medium strength, the same as at Costa) and the same with the syrup, change depending on how sweet you want it. I chop up anything I have in the fridge, use any nice sauce and change between rice or noodles. It's very much a 'see what's in the fridge and throw it all together' kind of meal. And for that reason I think everyone should have this recipe in their repertoire, which is why I'm sharing it with you today!<br />

Heat a wok or pan on a high heat with a little sunflower or groundnut oil. Add in the carrots, and stir regularly for 4 minutes. Now add in the courgettes, mushrooms, mange tout and chard stalk. Cook for another 3 minutes, or until the courgette is slightly translucent and brown.<br />
Put the rice on to warm for 3 minutes in a pan with a splash of water. Throw in the remaining vegetables into the wok, and stir for a minute. Now add in your sauce (doesn't have to be the one I suggested), and let it bubble. Once both your rice and the sauce is warm, serve! I like to add some fresh coriander for the top.<br />

Chop your onion finely and sauté in a little olive oil for 10 minutes (After 5 minutes, add in a clove of crushed or finely chopped garlic). While your onions cook, chop your tomatoes into 1cm chunks, and add to a separate pan with the olive oil, on a medium heat. Chop the sun-dried tomatoes into 1/8ths, or larger if you want to eat them in chunks, and add to the pan of tomatoes. Pour in a little white wine, I usually pour for around 2 seconds. </div>

For the Zucchini, I use a machine that has recently become very popular, called a vegetable spiruliser. It's very easy and simple to use (and clean up after!). It's quite affordable, and makes healthier and lighter vegetable spaghetti. To buy one, check them out <a href="http://www.lakeland.co.uk/70635/Vegetable-Spirali" target="_blank">here</a>. (If you don't want to buy one, you can shred your zucchini into long 'ribbons' using a vegetable peeler, simply run the peeler straight down, and keep going in the same angle until you reach the middle, then turn around). Spirulise the zucchini into long strands (I call this Courgetti, courgette being the English word for Zucchini). This takes about 3 minutes to cook, sauté in a pan with a little olive oil, start cooking when your pasta has 3 minutes left.<br />
When the pasta has 3 minutes cooking time left, stir in roughly shredded basil leaves and spinach, the onions and garlic, and salt and pepper to taste. When the pasta is done, rinse with hot water and stir in with the sauce. Plate up, then garnish with the 'courgetti', and I like to add a few fresh tomatoes and basil leaves on top. Enjoy!<br />

And wow! What an amazing lipstick! At Christmas I was very pleased to receive my No.1 most wanted item (next to Miss Dior Blooming Bouquet perfume!), a Rouge Dior lipstick in 683 Esquisse. The lipstick is specially formulated to give our lips 'voluptuous care', which is something I always look for in a lipstick. With lips that dry out in the hour, and need constant re-application of lip balm, I found my lips feeling hydrated for hours while wearing this lipstick.<br />
Rouge Dior feels lovely and balmy on, without feeling either sticky or drying, and it goes on very smoothly. It's strong in colour and stays on for around 4 hours before it needs topping up, even with eating and drinking it hardly fades.<br />

This time only a few weeks ago it would have been dark for at least an hour, but now it's only just sunset! My college days the last few months were a dreary schedule of:</div>

When you're stuck inside all day every day, it's amazing what a quick burst of fresh air can do. In the winter it may be cold and damp, but making time to get out even for just a 10 minute walk will wake you up and make you happier (<span style="-webkit-text-size-adjust: auto; background-color: rgba(255, 255, 255, 0);">maybe less so if it's raining)</span><span style="font-family: 'Helvetica Neue Light', HelveticaNeue-Light, helvetica, arial, sans-serif;">- I walk to Costa Coffee, I get both the benefit of fresh air and a nice warm drink at the end of it!</span></div>

<span style="font-family: 'Helvetica Neue Light', HelveticaNeue-Light, helvetica, arial, sans-serif;">Just like in my first tip, having a brief walk or a trip to the gym will wake you up and give you motivation throughout the day. Anything that gets your heart and muscles working faster than usual will lift your mood (you've probably heard that exercise releases mood enhancing endorphins) and increase your concentration - I find being inside in unnatural light for a long time makes me sleepy and I lose concentration easily.</span></div>

But when it's cold and miserable outside we tend to gorge on fatty comfort foods, which lack the necessary nutrients. Fear not! I have composed a list of the best feel-good vitamin packed foods you can include into your diet easily on a daily basis:</span></div>
